This bottling is 90% Nero d'Avola with 10% Grillo from vines on soils with limestone deposits
Jeff Coutelou was one of the first to be certified organic in France — back in 1987
The wine stays in these barrels for an elevage of about 9 months
Organically-farmed Glera grapes and organic yeasts used for secondary fermentation via Charmat method
The fir trees are reflected in the aroma as well but just sneaking in under the fruit and refreshing alpine minerality
The grapes are hand harvested in small crates
The parcel is planted to heirloom Wente chardonnay clone cuttings taken from Celilo vineyard on Underwood and smaller amounts of Pinot Gris and Pinot Noir

Then it’s aged in a mix of chestnut
This is layered with spicy red fruits and pleasantly chewy tannins
Vineyards were divided between Antonine and his two sons Antoine-Marie and Jean-Baptiste
A blend of Palomino Fino and Pedro Xímenez from 7 hectares in La Viña El Carmen
